    Peppermint Chocolate Chip Mug Cake

    This soft and fluffy mug cake is filled with chocolate chips and a dash of peppermint, making it a truly satisfying homemade dessert. Made with only 7 ingredients and cooked in the microwave in under 2 minutes!

    There are those nights where you need a little bit of chocolate after dinner to satisfy the cravings. Then there are those nights where you need a more substantial chocolate fix. Cue to this Peppermint Chocolate Chip Mug Cake for one! if you are a fan of anything peppermint and chocolate, this recipe takes it to the next level.

    Ingredients:

    Flour: Plain (all-purpose) or self-raising flour have both been tried and tested in this recipe. Can confirm that both produce the same fluffy mug cake as the final result!

    Cocoa powder

    Nut butter: almond butter or peanut butter will work and neither give a strong nutty flavour in the final product.

    Maple syrup: could be substituted for honey or golden syrup.

    Milk: any type of milk will work.

    Peppermint extract: usually found in most supermarkets.

    Chocolate chips

    Instructions:

    1. Add all ingredients to a small ramekin dish or small mug.
    2. Mix with a teaspoon until well combined.
    3. Place in microwave for 90 seconds, then remove and sprinkle extra choc chips on top.

    Top tips:

    1. This recipe works best in a small ramekin dish or a small tea mug.
    2. I tried putting my mug cake in the air-fryer (in the ramekin) and can confirm this did not turn out well – too dry!
    3. Wait until you remove remove the mug cake from the microwave before sprinkling extra choc chips on top so they don’t burn in the microwave.

    Description

    The quickest and yummiest mug cake ever – with easy ingredients you probably have in your kitchen already. This will be a huge winner if you are a fan of anything peppermint chocolate! 


    Ingredients

    Scale
    • 1 ½ tablespoons self-raising flour (or 1 ½ tablespoons of plain flour and ¼ teaspoon baking powder)
    • 2 teaspoons cocoa powder
    • 1 tablespoon almond or peanut butter
    • ½ tablespoon maple syrup
    • 1 ½ tablespoons milk
    • ½ teaspoon peppermint extract
    • 2 tablespoons chocolate chips, plus extra to sprinkle on top.

    Instructions

    Notes

    Best enjoyed warm straight from the microwave. If you let the cake sit for a while in the ramekin or mug after removing from the microwave, it may go a little hard and lose its fluffiness!
