    Easy Baked Skillet Gnocci with Mozzarella (Vegetarian)

    Easy one-pan baked gnocci using the ease of a skillet. With melted golden brown cheesy mozzarella on top and fresh fragrant basil leaves. This simple vegetarian dinner is comforting and satisfying.

    This is a simple weeknight vegetarian dinner that will be popular amongst most. Prepared with steps using ready-made gnocci out of a packet, keeping it nice and easy.

    This meal is prepared in one skillet pan only. The marinara sauce is added to the skillet along with the uncooked gnocci. The mixture is then brought to a simmer, which allows the gnocci to cook perfectly within the dish. Lastly, the skillet is placed under the grill to melt the cheese on top of the dish and voila!

    Ingredients:

    • Extra virgin olive oil
    • Garlic cloves (or minced garlic)
    • Ready-made gnocci
    • Fresh mozzarella
    • Diced tomatoes
    • Brown onion
    • Fresh (or dried) oregano and basil

    Instructions:

    1. Place all marinara ingredients into a blender and blend until smooth. Set aside.
    2. Place skillet on stove-top on a moderate heat and add oil. Once the oil is heated, add the garlic and saute until lightly golden brown.
    3. Add marinara sauce and gnocci to the skillet (you will not need to pre-cook the gnocci as it will cook perfectly in the sauce).
    4. Bring to a simmer and cook for about 5 minutes until the gnocci is soft, stirring frequently. You can insert a fork into the gnocci to test if it is soft enough to eat. 
    5. Once the gnocci is cooked, remove the skillet from the heat and place the sliced mozzarella cheese evenly on top.
    6. Preheat the grill and place the skillet underneath until the cheese is melted.
    7. Remove from the grill, garnish with fresh basil leaves and enjoy.

    Questions about the recipe:

    Is it essential to boil gnocci before cooking with it?

    No, it is not essential. Gnocci can be pan fried in a little olive oil or added to a sauce and simmered until soft/cooked, as per this recipe.

    Are gnocci healthy?

    Gnocci is made from potatoes, which are an excellent source of resistant starch and vitamin C. It depends on how you cook and enjoy the gnocci, but in this recipe it is simply added into the sauce and therefore, remains healthy.

    Ingredients

    Scale
    • 1 tablespoon extra virgin olive oil
    • 2 garlic cloves (or 1 teaspoon minced garlic)
    • 1 x 500 g packet of ready made gnocci
    • 250 g fresh mozzarella cheese, sliced into ~0.5 cm thick slices (or ¼ inch)

    Marinara sauce:

    • 2 x 400 g can diced tomatoes
    • 1 x medium brown onion, diced
    • 1 garlic clove (or ½ teaspoon minced garlic)
    • 2 tablespoons extra virgin olive oil
    • 2 tablespoons fresh oregano, finely diced (or 2 teaspoons dried oregano)
    • 2 tablespoons fresh basil, finely diced (or 2 teaspoons dried basil)

    Optional:

    • Fresh basil leaves to sprinkle on top

    Instructions

    1. Place all marinara ingredients into a blender and blend until smooth. Set aside.

    Notes

    Place leftovers in an air-tight container and store in the fridge for 3-4 days.
